Sunday Cottage Fries
Ingredients:
- 3–4 gold potatoes, cubed
- 1–2 tablespoons coconut oil
- salt and pepper
- 1/2 cup freshly shredded parmesan cheese
Directions:
Cube potatoes. Rise, dry, and set aside.
Heat coconut oil in pan, add rinsed and dried potato cubes, and add salt and pepper to taste. Allow to brown on all sides.
During the last few minutes, top with parmesan cheese and allow to melt. Do not stir. This gives the potatoes a tangy and unique taste.
