Use a combination of whole grain flour and all-purpose flour for this sourdough bread.
Sourdough Khorasan Sandwich Bread
Servings: 2 loaves
Preparation Time: 6–8 hours
Ingredients:
8 cups Khorasan Whole Grain Flour
1 cup ancient grain all-purpose flour
1 cup fed and rested sourdough starter
2 and 1/2 teaspoons salt
6 tablespoons melted coconut oil
1/4 cup honey
3 and 1/2 cups water
Directions:
Mix all ingredients together, starting with around 3 cups of water and adding more until a smooth doughball forms.
Knead dough for 10 minutes on lightly floured surface, then place in an oiled bowl and cover. Let rise until doubled in size. This can take from 3–6 hours, depending on the warmth of the kitchen.
Divide dough in half and shape into loaves and place in oiled bread pans. Cover and let rise until cresting pan tops. This can take 1–2 hours, depending on the warmth of the kitchen.
Slash tops of loaves. Bake in preheated 400 degree oven for around 35 minutes until browned on top.
Turn out of the pans and allow to cool.
