Coconut, Banana Muffins

Ingredients:

• 1/2 cup coconut oil, melted
• 1 tablespoon plain Greek yogurt
• 2 ripe bananas, mashed
• 1/2 cup whole cane sugar
• 1 egg
• 1 teaspoon vanilla
• 1 cup einkorn flour
• 1 teaspoon baking powder
• 1/2 teaspoon salt
• 1/4 cup coconut flakes, optional

Directions:

Preheat oven to 375 degrees F. Butter the muffin tins or use paper cup liners.

Whisk melted coconut oil and yogurt together, add bananas and sugar, and mix well. Add beaten egg and vanilla and mix for 1 or 2 more minutes.

In a separate bowl, sift together flour, baking powder, and salt. Fold flour mixture into banana mixture carefully just until incorporated.

Fill muffin cups half full and sprinkle coconut flakes on top. Bake 13 to 16 minutes until golden brown.

Chocolate Coconut Rolled Truffles

Servings: 12
Preparation Time: 15 minutes

Ingredients:

• 1/2 cup cocoa powder
• 1/3 cup Coconut Cream Concentrate
• 1/4 cup coconut oil
• 1/2 cup raw honey
• 1/2 cup coconut flakes

Directions:

In a small pan over very low heat, melt all ingredients (except coconut flakes) until thoroughly combined. (Use a double boiler if you have one.)

Place mixture in the refrigerator to cool, then roll mixture into balls and roll in the coconut flakes. These need to be stored in the refrigerator until ready to enjoy.

Honey, Peach, Coconut Ice Cream

Servings: 8
Preparation Time: 5 minutes

Ingredients:

• 3 cups coconut milk*
• 6 peaches, peeled and frozen, 3 of them diced
• 1/2 cup raw honey
• 2 teaspoons vanilla
• pinch salt

Directions:

Blend all ingredients except the three diced peaches. Stir in the three diced peaches. Pour into your ice cream maker, ice cream ball, or use any preferred ice cream making method.
