  • 1/2 frozen banana
  • 1/3 cup frozen pineapple
  • 1/2 cup frozen strawberries
  • 2 tablespoons protein powder
  • 1/2–1 teaspoon turmeric powder
  • 1 1/3 cups organic orange juice
  • 1 tablespoon Gold Label Virgin Coconut Oil

Directions:

Blend all ingredients together in a high speed blender.

Preheat oven to 375 degrees F. Butter the muffin tins or use paper cup liners.

Whisk melted coconut oil and yogurt together, add bananas and sugar, and mix well. Add beaten egg and vanilla, and mix for 1 or 2 more minutes.

In a separate bowl, sift together flour, baking powder, and salt. Fold flour mixture into banana mixture carefully just until incorporated.

Fill muffin cups half full and sprinkle coconut flakes on top. Bake 13 to 16 minutes until golden brown.

Mix all dry ingredients in a large bowl.

In a medium-sized bowl, whisk together all wet ingredients.

Slowly add wet mixture to dry mixture and stir until incorporated.

Preheat greased griddle or skillet to 350 degrees F or medium-high.

Spoon pancake batter onto griddle and cook for 2 minutes or until underside turns golden brown. Flip and cook an additional 2 minutes.

Serve warm with sliced bananas, syrup, and grass-fed butter, or enjoy them plain just as they are!
