Gluten-Free, Blueberry, Coconut Flaugnarde

Flaugnarde is similar to the well-known French baked dessert, Clafoutis. It’s simple, sweet, and rustic with juicy berries covered in a flan-like batter and baked to golden perfection. It is a good dessert to bring along for a picnic in the country. Our version is gluten- free, and no one will get left out of enjoying this lovely treat!

Servings: 4
Preparation Time: 20 minutes

Ingredients:

  • 6 eggs, separated
  • 3/4 cup applesauce
  • zest and juice of 1 lemon
  • 1/2 teaspoon vanilla extract
  • 4 tablespoons butter, melted
  • 1/2 cup coconut flour, sifted
  • 1/2 teaspoon baking soda
  • 1 cup blueberries, fresh or frozen

Directions:

Preheat waffle iron to low heat.

Separate eggs, placing the yolks in a bowl and the whites in another.

Use a hand blender to whip egg whites until soft peaks begin to form. Set aside.

Combine applesauce, lemon zest, juice, vanilla, and melted butter, mixing together with the egg yolks.

Sift in coconut flour and baking soda.

Fold in egg whites with the rest of the waffle batter, being careful to not completely flatten the egg whites. Gently mix in blueberries.

Generously grease waffle iron with coconut oil or butter and drop a large spoonful of batter into the center. Do not fill iron completely with batter. Carefully remove waffles when they are done and repeat with remaining batter. (These waffles are very light, so I suggest removing them carefully with a flat spatula).

Serve with a scoop of whipped cream or drizzle of maple syrup.

Ingredients:

  • 1/2 cup coconut flour
  • 1/4 cup almond flour*
  • 1/3–1/2 cup sugar
  • 1/4 teaspoon sea salt
  • 1/2 teaspoon baking soda
  • 3 pastured eggs
  • 3/4 cup full fat coconut milk**
  • 1 1/2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/2 cup fresh organic blueberries (or more if you prefer)

Icing:

  • 3/4 cup powdered sugar
  • 4–5 tablespoons fresh lemon juice
  • 1/8 cup nondairy milk

Directions:

Preheat oven to 350 degrees F.

Combine the flours, sugar, salt, and soda in a bowl and set aside.

Beat the eggs, coconut milk, and lemon juice in a large bowl.

Combine the flour with the wet ingredients and the zest and mix until all of the clumps are out. Fold in the blueberries.

Bake in preheated oven for about 30 minutes

For the icing:

Place all of the ingredients in a blender and combine. Drizzle over the bars once they have cooled.

Variations:

Any berry or combination of berries would work in here. I would cut any berry besides blueberries into smaller pieces.

*You can grind your own almond flour by placing whole almonds in a blender/food processor and blending until you get a fine meal.

**For the freshest coconut milk, make homemade coconut milk. (See video at this link.)

Ingredients:

  • 1/2 cup coconut flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup banana puree
  • 6 eggs, beaten
  • 1 teaspoon vanilla extract
  • zest and juice from one lemon
  • 4 tablespoons coconut oil
  • 1/4 cup chopped walnuts
  • 1 cup blueberries

Directions:

Combine and sift dry ingredients

Puree or mash 2 medium bananas (about 1 cup) and mix with eggs, one at a time.

Add vanilla extract, coconut oil, lemon juice, and zest, and then combine with dry ingredients.

Finally, fold in walnuts and blueberries.

Bake for 18 to 20 minutes at 400 degrees.
