Mocha, Chocolate Chip Cookies

Preparation Time: 20 minutes
Ingredients:
- 2 tablespoons cocoa
- 3/4 cup oats (regular or instant)
- 1/4 cup + 2 tablespoons coconut flour
- 1/4 teaspoon salt
- 1/4 cup sugar
- 1 1/2 teaspoons instant coffee
- 1/4 cup carob chips (or chocolate chips of choice)
- 1/4 cup melted coconut oil
- 1/2 teaspoon vanilla
Directions:
Mix all ingredients completely and scoop onto a cookie sheet. Refrigerate until solid enough to hold together. ENJOY!! Keep extras refrigerated.
