(No Bake – Gluten-Free)
Orange, Coconut, Carob Fudge
Ingredients:
- 3 cups walnuts
 - 2 1/2 cups shredded coconut
 - 1/2 cup carob powder
 - 1/4 cup honey
 - 1/4 cup pitted dates
 - 3 tablespoons coconut oil
 - 1/2 teaspoon vanilla beans (scrape and set the seeds aside)
 - 1/2 teaspoon finely grated orange zest
 
Directions:
Process nuts and coconut in a food processor and set aside in a mixing bowl. Stir the remaining ingredients together and mix until well blended. Add this mixture to the coconut mixture and stir very well. Press into a glass container and chill in the fridge until firm enough to cut.
