Author’s Note – You can make the sauce while cooking the pancakes or prepare ahead of time and store in a covered container in the refrigerator.
Use all organic ingredients if possible.
Chocolate, Coconut Bark
Ingredients:
Directions:
Pour oil in meatloaf pan, add flax, and let soften for 30 minutes.
Add remaining ingredients. Mix and let sit to soften chia seeds for 15 minutes. Stir again and refrigerate.
After mixture becomes solid, break into bite-size pieces and enjoy.

Author’s Note – If the smoothie is too thick, add just enough water or milk to enable the blender to blend freely.
Author’s Note – If you like sweeter granola, replace some of the rice syrup with honey.
Coconut, Date Balls
Ingredients:
Directions:
In a medium-sized saucepan, cook dates, honey, and oil over low heat until blended together. Take the mixture off the heat and add the shredded coconut and ground flax seeds. Cool.
Once cooled, stir in vanilla extract. Place extra coconut in a shallow bowl and roll date mixture into small balls, then roll in shredded coconut. Eat these warm or refrigerate.

Author’s Note – For a delicious change, any frozen berries can be used instead of the peaches or mangos.
This cookie recipe makes six dozen cookies, so these would be great for a large gathering.
