Ingredients:
- 1 cup yellow cornmeal
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon baking soda
- 1 cup milk
- 1 egg, (large)
- 4 tablespoons unsweetened applesauce
- 1 tablespoon coconut oil, melted
Directions:
Preheat the oven to 400 degrees F.
Grease an 8 or 9-inch square cake pan.
Mix the cornmeal with the baking powder, salt, and baking soda in a medium bowl.
In a small bowl, combine the milk, egg, applesauce, and oil.
Add the wet ingredients to the dry ingredients and mix together.
Pour the mixture into the prepared pan and bake for 15 minutes or until bread pulls away from the edges of the pan.
Cut into 4 squares and serve.
This is nice with ham and/or eggs and a bit of syrup or melted honey.
