Loaded Red Beans and Quinoa

Ingredients:
- 1/2 cup quinoa
- 1 cup water
- 1 teaspoon sea salt
- 1 tablespoon coconut oil
- 1 cup bell peppers, diced
- 1/4 cup onion, diced
- 1 cup cooked red beans
- 1 large tomato, diced
- 1 teaspoon garlic, minced
- 1/2 teaspoon black pepper
- 1/2 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1 teaspoon cilantro
Directions:
In a small saucepan, combine quinoa, water, and salt. Cover and cook over low-medium heat for about 15–20 minutes or until most of the water is absorbed and quinoa is soft and translucent.
Meanwhile, heat coconut oil in a large skillet. Sauté peppers and onion for about 10 minutes, stirring occasionally, or until slightly soft.
Add in red beans, tomato, garlic, pepper, chili powder, cumin, and cilantro. Next, add in cooked quinoa. Cook for an additional 5–10 minutes.
Serve with desired toppings such as salsa, sour cream, avocado, etc. and chips.
