Gluten-Free Oh “Hoppy” Day Carrot Cookies

Ingredients:
- 3/4 cup coconut flour
- 1/2 cup protein powder
- 1–2 tablespoons pumpkin or apple pie spice
- 5 tablespoons coconut oil
- 1/2 cup honey
- 2 eggs
- 4–5 medium carrots, finely grated
- 2 cups water
Directions:
Preheat your oven to 360 degrees F.
Combine all ingredients into a bowl and stir together.
Flatten the batter onto a baking sheet lined with parchment paper. Cut bunny shapes with cookie cutters.
Bake the cookies for 10–15 minutes. Allow to cool before serving.
