Gluten-Free Fried Green Tomatoes

Ingredients:
- 1/2 cup coconut flour
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon paprika, optional
- 1 egg, lightly beaten
- 1 large green tomato cut into 1/4-inch slices
- 2–4 tablespoons coconut oil or palm shortening
Directions:
Combine the first four ingredients in a shallow bowl. Dip the tomato slices in the beaten egg and then into the coconut flour mixture.
Heat a skillet for about 5 minutes over medium-high heat. Add the oil. Fry tomato slices till light brown, about 2 to 3 minutes on each side. Serve immediately.
