Coconut Flour, Peach Cobbler

Ingredients:
Filling:
- 2 cups peach slices (about 4 large peaches, peeled and sliced)
- 1/4 cup honey
Topping:
- 1/2 cup almond flour
- 1/2 cup cassava flour
- 2 tablespoons coconut flour
- 1/4 cup arrowroot starch
- 1 teaspoon baking powder
- 1/4 cup sugar
- 1/4 cup honey
- 1/2 cup coconut oil
- 1 egg
- 1 teaspoon vanilla
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
Directions:
In a greased 2-quart baking dish, combine peaches and 1/4 cup honey.
In a bowl, stir together sugar, honey, and coconut oil until smooth. Add egg and vanilla and stir to combine.
Gently stir in almond flour, cassava flour, coconut flour, arrowroot starch, baking powder, salt, and nutmeg until no lumps remain.
Pour the batter over the peaches and spread evenly.
Bake at 350 degrees F for about 20–25 minutes or until the topping is cooked through and slightly brown. Remove from the oven and let cool about 10 minutes before serving.
