Easy Chicken Tikka Masala with Coconut Milk Servings: 4 Preparation Time: 30 minutes
Ingredients: 2 tablespoons Pure Coconut Oil or *Gold Label 2 tablespoons butter 1/2 medium sweet onion, diced 1 1/2 pounds chicken, cut into small pieces 2 teaspoons Himalayan Salt 1 teaspoon freshly ground black pepper 3 cloves garlic, minced 1 tablespoon freshly grated ginger 1/2 teaspoon cinnamon 1 teaspoon cumin powder 1/2 teaspoon coriander powder 1 1/2 teaspoons chili powder 1 1/2 teaspoons turmeric powder 2 cups tomato sauce 1 cup chicken broth 1 cup coconut milk** 1/2 cup plain yogurt 2 tablespoons fresh cilantro leaves, chopped
Directions: Heat coconut oil and butter in a large skillet over medium heat. Add onion and sauté. In a bowl, season chicken with salt and pepper, add to the onions and oil, and cook until golden, about 4--5 minutes. Add garlic, ginger, cinnamon, cumin, coriander, chili powder, and turmeric. Stir until fragrant, about 1 minute. Stir in tomato sauce and chicken broth. Bring to a boil, reduce to simmer, stirring occasionally until reduced and slightly thickened, about 10 minutes. Stir in coconut milk and yogurt until heated through, about 1 minute. Serve over rice and garnish with chopped cilantro leaves.
