No-Bake, Gluten-Free, Peanut Butter, Coconut Balls

Combine coconut oil, peanut butter, maple syrup, and flour. Allow to firm by cooling in the refrigerator for about 10 minutes.
Roll the mixture into about one-tablespoon balls, and then roll the balls in the coconut flakes.
Allow to firm up in the refrigerator for about 15 minutes. Stores well in the refrigerator.
*Gluten-Free Flour Mix:
Makes 3 cups
Mix all ingredients together and use as directed.

Baked Apples with Cinnamon and Oatmeal Topping

Preheat oven to 350 degrees F.
In a skillet heat 4 tablespoons coconut oil, and then add sliced apples and cook for about 10 minutes. Move to casserole dish.
Heat remaining 2 tablespoons coconut oil, 1 teaspoon cinnamon, maple syrup, and oatmeal in the skillet. Cook about 5 minutes until oatmeal browns a little.
Top apples with oatmeal mixture and bake for about 30 minutes.

Author’s Note – This is my Mamaw’s recipe for a unique pecan-coconut pie. She called it Papaya Pie. No one knows why; there’s no papaya in it. It is my all-time favorite holiday dessert and a must-have for all of my family’s Thanksgiving and Christmas celebrations.

Mix butter, coconut oil, and sugar together until creamy. Add eggs to the mixture. Add dry ingredients.
Slowly add water until the mixture is wet enough to be shaped into a soft dough. Scoop the dough by the tablespoon onto a prepared baking sheet. Shape dough into cookies by hand.
Bake at 375 degrees F for 30 minutes or until golden brown.
