Gluten-Free, Pecan Pie Muffins

Preparation Time: 10 minutes
Ingredients:
- 8 ounces pecan pieces
- 1/2 cup coconut flour
- 6 eggs, (extra large)
- 3 tablespoons coconut oil
- 1 tablespoon vanilla
- 3 tablespoons honey
- 1/2 teaspoon sea salt
- 1 teaspoon baking soda
Directions:
Preheat oven to 400 degrees F.
Line muffin tin with 12 paper liners.
In a food processor, chop pecans until they resemble coarse crumbs. Add pecan meal and all other ingredients into mixing bowl and mix until just blended.
Divide into prepared muffin liners and bake for approximately 15 to 20 minutes or until lightly browned and firm to the touch.
