Combine Coconut Cream Concentrate with water and heat in a small pot on a low temperature until the Coconut Cream Concentrate is melted. Stir well. Add the honey. Mix well. Next, put in the coconut chips and chopped almonds. Combine well. Turn the stove off and allow the mixture to cool.
Fill 8 molds to the brim. Freeze.

Preheat oven to 350 degrees F.
Mix together coconut oil, sugar, coconut milk, and vanilla (if using).
In a separate bowl, mix flour, salt, baking soda, and one tablespoon sugar.
Combine wet and dry ingredients. The mixture will be very crumbly. Knead the dough. Nip off dough into tablespoon sized balls. Place them on a cooking sheet with parchment paper and flatten each cookie with your palm.
Bake for 12–15 minutes. Enjoy with homemade coconut milk.

Melt chocolate chips, coconut oil, and almond milk in a pan on the stove; make sure the milk is not too warm, then add this mixture to the food processor. Add all other ingredients and blend until very smooth.
Pour batter into a 9-inch pie pan and bake at 375 degrees F until a toothpick inserted in the middle comes out clean (approximately 15–20 minutes). Let cool, remove from pan, and top with whipped cream, if desired.
