Omega-3 Salmon Patties

Servings: 20+ patties
Preparation Time: 30–40 minutes

Ingredients:

  • 1 can wild caught salmon (14.75 ounces)
  • 2 tablespoons garlic, minced
  • 1 stalk scallions, chopped
  • 2 eggs, (extra large)
  • 1–2 teaspoons olive oil or coconut oil
  • half lemon, squeezed
  • 2 tablespoons ground flax
  • dry herbs and spices of choice
  • coconut oil for frying

Directions:

Heat enough coconut oil in a pan for frying on medium-high heat.

Mash the salmon on a plate. Mix in the garlic, scallions, eggs, 2 tablespoons olive or coconut oil, lemon juice, flax, and herbs and spices of your choice.

Scoop the salmon balls (I used a cookie scoop) into the pan and flatten with a fork. Fry for 5–7 minutes or until golden brown. Flip and fry until fully cooked.

Transfer to a plate and serve warm!

Note: Apple cider vinegar-crushed garlic cloves pairs well with this as a dipping sauce!

Preparation Time: 60 minutes

Ingredients:

  • 1 tablespoon flax seed
  • 3 tablespoons water
  • 2 cups oats
  • 1 cup oat flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 tablespoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon ginger
  • 1/2 teaspoon salt
  • 1/4 cup pure maple syrup
  • 1/4 cup Gold Label Virgin Coconut Oil
  • 2 teaspoon vanilla
  • 2 cups washed and shredded zucchini
  • 1/2 cup raisins
  • 1/2 cup pecans, chopped

Directions:

Mix flax and water at least 1 hour prior to starting.

Preheat oven to 350 degrees F.

Mix oats, flour, baking soda and powder, spices, and salt in medium-size mixing bowl.

In a large mixing bowl, add flax egg, syrup, oil, and vanilla. Blend well.

Add dry ingredients in 3 parts. Mix well.

Add zucchini to bowl and mix.

Add raisins and pecans and mix really well.

Spray baking sheet with Pam. Pour batter onto a sheet pan and press out and down with fingers.

Bake for 45 minutes.

Pumpkin, Coconut Oatmeal Bars

Servings: 24 bars
Preparation Time: 10 minutes

Ingredients:

  • 4 1/2 cups pumpkin puree
  • 5 cups old-fashioned/rolled oats (not the quick cooking kind)
  • 3/4 cup milk soured with 1 tablespoon lemon juice
  • 1/4 cup ground flax seeds
  • 1/2 cup real (grade A or B) maple syrup
  • 2 tablespoons pumpkin pie spice
  • 2 tablespoons coconut oil
  • 1/2 cup unsweetened coconut flakes
  • 3/4 cup dates, raisins, dried cranberries or any other dried fruit you wish (chopped)
  • 3/4 cup chopped nuts (unsalted)

Directions:

Preheat oven to 350 degrees. Prepare a 9 x 13-inch glass baking dish by lightly coating with coconut oil.

Add all ingredients together and mix well. Press into baking dish.

Bake for 40–45minutes or until top is golden brown. Remove from heat and let cool. Cut into squares.
