Gluten-Free, Baked Sweet Potato Pancakes

Preparation Time: 1 hour plus 15 minutes
Ingredients:
- 3 pounds sweet potatoes, baked and skin removed
- 1/4 cup coconut oil
- 1/4 cup maple syrup
- 4 eggs
- 3 tablespoons coconut flour
- 1/4 teaspoon salt
- 1 tablespoon cinnamon
Directions:
Mash baked sweet potatoes, and then mix in remaining ingredients. Shape into small cakes. This recipe makes about 16.
Bake cakes at 350 degrees F for 40 minutes.
